Chemicals produced from nitrites and secondary amines when heated or subjected to highly acidic conditions. Nitrites are found in tobacco and food products, especially beer, fish, meat, and cheese products preserved with nitrite pickling salt. Many nitrosamines are considered carcinogenic. Tobacco smoke is considered one of the major causes of lung and other cancers.
